I've used all three as well but we're largely satisfied with TS2 as it JustWorks(TM) and there's been a TS host running on my server for many years now. I think the primary reason is that my fellow gamers tend to use whatever I set up and I found the linux setup and configuration of Vent, Mumble and TS3 all over complex and not worth the hassle when we all already use TS.
The down side is the latency on TS at high quality but given we mostly natter rather than co-ordinate we've got used to it. I'll probably check out the newer servers when I find time but then the challenge would be to change my users habits.
